Elsylee is not only the name of our artisan patisserie, it is also our founder’s namesake. The name’s background is quite unique. However, its utilization has nothing to do with an intent of appearing “distinct” or "particular" and only to do with the story that illuminates its background, a factor that holds the key to our artistic philosophy and mission.
The name "Elsylee" is a composite of the names of our founder's grandmothers, both of whom hail from different European foregrounds.
On her paternal line, Elsie Abbott provided the artisan mastery and spectacular refinement of London. Her grandmother on her maternal side, Leticia Argüeso from the ancient Cantabrian region of Northern Spain (Galicia), was raised amidst some of the finest baked goods in the world.
Out of these two primary influences, our culinary philosophy was born. With the further convergence of Elsylee’s Catalan forebears, all of whom derive from both sides of her family through the Durand and Rotger lines, Elsylee's Artisan Cookies represent a diverse and exotic European landscape of flavors, while simultaneously providing the unifying language and theme of our brand.
Elsylee herself began baking at the tender age of 13, and once she figured out that she could make her own cookies without a rigid guideline, she started developing mixes and designs. She continued to hone her craft during high school and after college began a career in professional catering and event planning in Manhattan, New York.
Gradually Elsylee found an outlet to sell her own pastries directly to her customers, all of them homemade and custom designed for each event.
As many who personally know her can attest, Elsylee approaches her life as passionately as she does her work. Her humor, intelligence, and fine tuned aesthetic instincts shine through all of her pastry designs. Through her frequent travels she continuously expands her range of inspirations and cultural experiences. This way, she balances the demands of a brilliant career with the laughter and intimacy of family and friends, her biggest joy.
Ultimately, her main goal has always been to touch people's lives -- and thus she is thrilled that her patisserie appeals to people of all backgrounds and ages.
